We will brine, sauté, grill, and roast chicken, turkey and Cornish

In session two of the intermediate level series we
will learn about the Five Mother Sauces of Classic French Cooking;
Bechamel, Espagnole, Tomato, Hollandaise, and Veloute. And also Five
modern Sauces; Rosemary Port Sauce, Green Peppercorn Mustard Sauce, Red
Pepper Aioli, Raspberry Chipotle Sauce, and Cuban Mojo Sauce. We will
serve our sauces with sautéed chicken and pork cutlets. Of course we will
also enjoy a green
salad, vinaigrette, and fresh fruit with cheese for
dessert. |

Please join Mardi for some fabulous grilled bistro specialties. You will
learn to prepare Grilled Chicken Paillards (cutlets), Grilled Asparagus,

We will journey via van (actually my large and very comfortable SUV) to
the 17th Street Farmers Market to shop one of Tucson’s best food markets.
We can buy fresh fish, organic vegetables, and many European
and Asian
specialty foods. We will then venture to Roma Imports, for
some delicious
Italian specialties. By now Mardi is starving so we go to Vivace
for a delicious lunch from Mardi’s classmate Daniel Scordato.
Then on to
Jasmine market for Persian foods, and India Dukaan for
Indian foods.
We will provide ice chests to carry all our food purchases safely on our
journey and of course, lots of bottled waters. I have recently added the
wonderful Anita Street Market to our list. It is a tiny Mexican
food
market and their tortillas are fabulous!
Coffee and continental breakfast and lunch at Vivace is
included.
