Lemon Thyme Vinaigrette  
 
Yield: about ¾ cup  
INGREDIENTS:
 
4 tablespoons fresh lemon juice
2 small cloves garlic; minced to a fine paste
1 teaspoon minced fresh thyme
½ cup extra virgin olive oil
Sea or Kosher Salt and Freshly ground pepper to taste


METHOD:
Add lemon juice to a small bowl, add garlic and stir.

Let sit while you prepare the rest of the ingredients.

Add the olive oil and whisk.

Add the thyme and the salt and pepper; adjust seasonings.
