Mediterranean Egg Sandwich  
     
Yield: 2 sandwiches

½ loaf of crusty bread like a baguette
2 tablespoons olive tapenade
2 large roasted red pepper strips
Green leaf lettuce 2 or more leaves, according to taste
2 hard boiled eggs
olive oil, about 1 tablespoon
 
 
 
 
 
   

Cut the loaf of bread in half, then in half lengthwise, to make two sandwiches.

Drizzle the olive oil, over all four pieces of bread
Spread the olive Tapenade on two of the slices
Layer the lettuce, red pepper, and eggs on the other slice of bread.
Top with the Tapenade slice.

You may have to squish your bread a little to fit your mouth, but it’s worth it!
