INGREDIENTS:
2 cups diced onions
2 cups diced celery
½ cup (1 stick) unsalted butter
4-6 green chiles; roasted, seeded, peeled, and
diced
1 ½ teaspoons crumbled dried sage
¾ teaspoon dried thyme
about 1 pound of leftover white bread cubed; dried
in the oven,
or left out overnight on a baking tray, uncovered,
overnight
Salt and pepper to taste
THE METHOD:
Melt the butter in a large
sauté pan over moderate heat.
Add the onion and celery and cook, stirring, until
they are softened, but not brown.
Add the green chilies, and seasonings, cook for
about 2 minutes more; just long
enough to blend the flavors.
Transfer to a large bowl; add the bread cubes and
salt and pepper.
Taste and adjust seasonings if
necessary.
Let cool, and either stuff turkey and bake, or put
in a separate casserole dish and bake at 350 °F.
oven for about 30-40 minutes.
